June has got to be my favorite month. Well, September is actually my favorite month because it’s little N’s birth month, but June comes a close second. In June, the days are long, sunny and lazy, because school is out and I can finally justify having popsicles for breakfast.
Summer breakfasts and dinners can be light and easy with all the fresh produce in the markets right now. I simply cannot get enough of the juicy cherries and berries that I keep finding everywhere. Not to forget, my homegrown herbs like basil and mint are flourishing and keeping me happy. They are just perfect in drinks and desserts.
Speaking of which, I am having a really hard time trying to figure out whether to categorize this recipe into a breakfast or dessert. These waffle fruit tarts can easily go from breakfast to sweet dinner or light dessert. So many options yet they cannot be easier to put together with the new and improved Eggo Thick & Fluffy Waffles, now with more flavor than ever. Eggo Thick and Fluffy Waffles are a great solution for so many occasions. It is the perfect option for a simple, quick breakfast, a nutritious breakfast for when you want to eat healthier, an indulgent savory meal or even a complex dessert.
Recently, I grabbed a couple of packs of the Kellogg’s® Eggo Thick & Fluffy Original ORIGINAL (now with Madagascar Vanilla) and the newly introduced Kellogg’s® Eggo Thick & Fluffy Double Chocolatey Waffles from our local Walmart. I cannot believe how incredibly fluffy and thick the waffles are, with the perfect vanilla and chocolate flavors, creating the perfect vehicle for my waffle fruit tarts.
Apart from these two, I am also planning to try the Kellogg’s® Eggo Thick & Fluffy Blueberry Waffles and Kellogg’s® Eggo Thick & Fluffy Cinnamon Brown Sugar Waffles next. The waffle fruit tarts cannot be easier to make. Simply pop the waffles in a toaster or a hot oven until hot and crispy. Top them with a generous dollop of Greek yogurt lightly sweetened with honey, a medley of fresh summer fruits, nuts and mint leaves. Drizzle a light lime and honey drizzle on top and serve them up to your family. They’ll absolutely love it and you will end up making these gorgeous fruit tarts a regular in your meal rotation.

Here’s how to make these easy Waffle Fruit Tarts.
- Kellogg's® Eggo Thick & Fluffy Original waffles - 4, frozen
- Greek yogurt - 1 cup
- Honey - 3 tbsp
- Lime juice - 2 tsp
- Mixed fruits - 1 cup (see Notes)
- Almonds - 12
- Fresh mint leaves - a few, for garnish
- Prepare Kellogg's® Eggo Thick & Fluffy Original waffles as per package instructions, either in a toaster or in the oven until hot and crisp.
- Meanwhile, whisk together Greek yogurt and 1½ tbsp honey in a small bowl. Set aside.
- In another small bowl, whisk together the rest of the honey and lime juice. Set aside.
- Chop and prep the fruits that you intend to use.
- Spread ¼ cup sweetened yogurt over a crisp waffle. Top with an assortment of fruits and some almonds. Drizzle the lime-honey over it and garnish with a fresh mint leaf. Serve immediately.
2. I used an assortment of fruits like strawberries, kiwi, cherries and mangoes. Some other examples are blueberries, raspberries, peaches, apricots, apples, orange segments, grapes, etc.
