Ah…summer! After a long and brutal winter, I am ecstatic that warmer months are ahead. And boy, is the quintessential Texan summer living up to its name!
All I can think of are tall, cold glasses of iced teas and lemonades. I have ditched my evening cup of hot chai for a cool beverage nowadays. It really is that hot. And to top that, we had an air conditioning malfunction last week. Not fun at all. But it’s all been sorted out, so we’re good.
It was on a non-AC day that I took one look at my fruit stash and saw a bowl of lemons and a couple of Mediterranean pomegranates. I was already planning to make a pitcher of lemon iced tea, then I decided to make a pomegranate syrup for the tea.
And when I was brewing the tea, I ended up adding a small handful of dried rose petals and a few mint leaves from my little herb garden. After infusing the tea for a few minutes, it turned out so fragrant and delicious. Poured over lots of ice and the pomegranate syrup, I ended up with the most delicious pomegranate rose iced tea.
