The other day, my friend and I were marveling at just how fast kids grow up. It seemed like just yesterday that these rambunctious boys were mere babies and now they are playing noisy video games and pulling away from mommy’s public displays of affections! It’s not that my second grader does not like to cuddle, but just not in public with his friends watching. But they are all amazing kids, it’s just that they are growing up too fast.
Very soon, school will wrap up for the year and N will get his final report card for second grade. Third grade is kind of a big deal here because that’s when they begin appearing for standardized tests and other “big kid” stuff. When I was in third grade, I am pretty sure I was still counting on my fingers and reading picture books. But N is already doing fractions and reading chapter books. Can you see that I’m a proud mom?!!
So to celebrate this big milestone, I decided to throw him an early Graduation Party. As much as N loves my cakes and other bakes, there is a special spot in his heart for the cakes with fluffy whipped icing that we get from our grocery store bakery. I found these cute cake and cupcakes combo complete with fun graduation themed toppers. I am not a fan of gritty buttercream frosting on our cakes, but I love the fluffy whipped icing that is lighter than heavier buttercream with less sugar and fewer calories, and is perfectly sweet.
I’m the crazy lady that scrapes away the frosting off birthday cake, but not when they are frosted with whipped icing. So I was excited to try the new flavors and colors on offer at our local Walmart where I purchased these festive cakes and cupcakes just in time for graduation.
I kept the whole thing a surprise for the little one and added a few sweet touches to the dessert table. I pray that he finds every grade a fun adventure and continues his love for learning and creating.
I may or may not have snuck a cupcake before the grad arrived on the scene. I simply couldn’t resist! It was hard to decide whether I liked the chocolate whipped icing more or the pink tinged vanilla whipped icing. I was excited to learn that they also come in fun flavors like S’mores, Naturally Flavored Lemon, Cookies-n-Crème and Salted Caramel. And of course, they can be customized in any color under the sun, but we do have a soft spot for pastels.
If you know me, you would know that cakes and desserts are my weakness; so I’m happy to note that whipped icing is the better-for-you option (with less sugar, fewer calories and no trans fat) when compared to the heavier Buttercream icing and is also the preferred icing choice among taste testers.
Even if I am opting for a shortcut like buying the cake instead of making it from scratch, I still like to add a few fun touches. I went ahead and swirled the frosting in my signature ripple pattern and added a few colorful sprinkles. I used gold and silver confetti and used gold plates for serving the treats. Nothing less than the best for my gold-star grad!
