Put together a Mother’s Day gift basket with fragrant and delicate Earl Grey tea cookies glazed with tangy-sweet lemon and rose icing. Paired with a cup of tea, they are simply perfect for an afternoon snack or a tea party.
Mothers! Where would we be if we didn’t have them? It seems a touch clichéd to go all gaga over a modern holiday like Mother’s Day, but when you think about it, it kind of makes sense. Mothers have played an integral part of every story since historic times, shaping history with their actions, and silently raising further generations with love and sacrifice. Why should we not celebrate them, right?
Mother’s Day was never a big thing during my childhood, it didn’t have the glitz and glamor it has come to deserve in this millennium. When N was a toddler, I casually mentioned to his father that maybe they should do something about Mother’s Day. And believe it or not, every second Sunday in May, I wake up to the smell of a French toast & eggs breakfast-in-bed treat. The guys actually get better at it with each passing year. And I cannot wait for this year, because now the little one can actually make scrambled eggs all on his own. He is just 8. I am a proud mama!

If my mom lived closer, I would probably make her cookies; heart-shaped ones that are delicate and tender and so deliciously sweet. When I came across the Bigelow Earl Grey Tea, I knew I had to try baking tea flavored cookies. And they turned out so well that I put together a Mother’s Day cookie gift basket to share with her virtually. The next time we visit, I am definitely baking these cookies.
Let’s begin with the tea. Earl Grey black tea from Bigelow that I found on my recent Walmart run is one of the best Earl Grey tea that I have ever had. It is fragrant and full-bodied, brewing that perfect cup. I love the foil packaging that keeps the freshness and fragrance of the tea intact. Plus, it is manufactured in the US with quality tea & ingredients. Bigelow does tea proudly, sharing everything they are proud of that gives consumers the reassurance they are making the right choice and are in the know.
But guys, this is Texas. So I will probably end up using the pack of tea to make pitchers of iced tea. Making Iced Tea with Bigelow Tea is super easy and great way to connect with loved ones any time. Nothing says that you care than having a pitcher of iced sweet tea in the fridge for the family to come home to after a hard day of work, right?
A little bit of brewed and cooled Bigelow Tea added to the cookie dough makes for unbelievably fragrant and delicious tea sugar cookies. I modified a sugar cut out cookie recipe so that I can have the perfect heart shapes for these cookies, but you can roll it up a s blog, then slice and bake for a quick cookie fix.
The Earl Grey cookies are not overly sweet because I wanted to add a bright summery glaze. I glazed the cookies with a tangy-sweet lemon and rose glaze and it was the perfect complement to the cookies. Heaven in a bite! In winter, I might try this with a colorful blood orange or cranberry glaze, how lovely would that be?
These cookies are so easy to make. Pack some in a cute jar, add ribbons, fresh flowers, and a few packs of Bigelow Tea to make the perfect Mother’s Day goodie basket. Deliver it to your mom, grandma, teacher, friend, neighbor or anyone who plays an important role in your life.
Here’s how you can make Glazed Earl Grey Tea Cookies.
- Bigelow Earl Grey black teabags - 2, divided
- All-purpose flour - 2¼ cups
- Salt - ½ tsp
- Baking powder - ¼ tsp
- Unsalted butter - ½ cup, softened
- Sugar - 1 cup
- Egg - 1, large
- Rose water - ¼ tsp
- Powdered sugar - 1 cup, sifted
- Lemon juice - 2-3 tbsp
- Rose water - 1 tsp
- Dried rose petals - 2 tbsp
- Lemon zest - 1 tbsp
- Earl Grey Cookies: Steep 1 Bigelow Earl Grey black teabag as per instructions and cool completely before beginning. Set aside the other teabag if you want to decorate your cookies with flecks of black tea.
- In a medium mixing bowl, whisk together the flour, salt, baking powder and the contents of one teabag (optional). Set aside.
- In a large mixing bowl, cream together the butter and sugar until pale and fluffy, a couple of minutes.
- Add egg and beat until combined. Then add rose water and 2 tablespoons of the brewed and cooled Earl Grey black tea (discard the rest or use it for another purpose). The mixture will look curdled but beat it on medium speed for a minute and it should thicken up.
- With the beater on the lowest speed, add the dry ingredients, a little at a time, and mix just until the cookie dough comes together.
- Divide cookie dough into two portions, wrap them in cling wrap, and refrigerate for at least half an hour. You can also refrigerate the dough overnight or freeze it for longer durations. Set the dough out on the countertop to soften before rolling.
- On a lightly floured work surface, roll the dough out to ¼" thickness. Cut out 2.5" heart or other shapes using cookie cutters. Re-roll and use the scraps of dough to avoid any waste. (If dough scraps seem too soft, pop them in the fridge for a few minutes and try again.)
- Place the cut out cookies 2" apart on a large parchment paper-lined cookie sheet and refrigerate until firm, about 15-20 minutes. (You can also pop the tray into the freezer for 5 minutes to speed up the process. Chilling helps the cookies keep their delicate shapes better when baked.)
- Bake in a 350 deg.F pre-heated oven for 10-12 minutes or until the cookie edges are lightly golden.
- Remove the cookie sheet from oven and rest for 5 minutes. Gently remove cookies with a flat spatula and cool them completely on a wire rack before glazing.
- Lemon Rose Glaze: Whisk together the ingredients for a thick but pourable glaze. If it seems too thick, add a few drops of lemon juice or water; if it seems too runny, add more powdered sugar.
- Spread the glaze over completely cool cookies. Decorate with rose petals and lemon zest, if desired.
- Store the cookies layered between wax paper in an airtight jar or container.
