Smoothies are something that we throw together without thinking too much about it, right? A handful of chopped fruit, greens, vegetables, herbs, milk or yogurt gives us a different concoction every single time.
I try to feed the little guy smoothies almost every evening. He calls them milkshakes but they are really healthy fruit smoothies. His favorites are banana-chocolate, mango, mixed berry and avocado smoothies. The kid hates avocado, he rarely tries guacamole, which is a hard thing to do if you live in Texas; but he can down a creamy avocado smoothie in no time at all.
This avocado, lemon and mint smoothie is creamy and refreshing. I sweeten just a tough and love the light tang the lemon adds to it. The lemon also helps to keep the smoothie from browning rapidly. Neat trick, huh?
Avocados are full of good-for-you healthy fats. They can also keep you full longer. Avocado smoothies are a great breakfast potion or as a healthy snack between meals. I like to use regular milk in my smoothie; you can use plant-based milk too. You can sweeten this healthy avocado smoothie with honey if you like it sweet.
Here is the super easy recipe for creamy, delicious Avocado, Lemon & Mint Smoothie.
- Avocado - 2, medium
- Lemon juice - 1 tbsp
- Fresh mint leaves - 6-7
- Milk - 2 cups, cold
- Honey - 2 tbsp (or as needed)
- Remove the avocado flesh and add it to the blender jar. Blend with all the other ingredients. Taste and add more milk or honey if needed. Serve immediately in glasses.
