Mommying is hard work, no doubt. When my son was a baby, it was diapers and bottles, daycare and tantrums, and what not. Now that he is a school-goer, my work doesn’t stop, but my portfolio has undergone a slight change. Now I’m part confidante, part disciplinarian; his teacher, playmate, cook and entertainer. But… I wouldn’t trade it for anything in the world, because I have the sweetest boy!
Still, mommy could do with a little pampering every now and then, right? There’s nothing like having the boys sent away for a ball game or something so that I can unwind at home with a glass of golden Butter Chardonnay from JaM Cellars, and maybe a lovely book that is not written by Dr.Seuss!
Maybe I’ll have some pretty pink cupcakes as well. And don’t worry, I’ll save the boys some dessert for when they return. But the Butter is all mine!! Smooth as butter, with notes of stone fruit, crisp lemon and vanilla, it’s creamilicious and just melts in your mouth.
Like most moms, I feel guilty when I feel like taking time for myself. There are always a hundred things to do and even more things to plan for. Sometimes multitasking is a curse because the mommy brain never stops spinning. But there is nothing wrong with indulging in the things that you love once in a while.
I am a homebody and love having the house to myself. So if you are like me as well, I have some tricks up my sleeve when it comes to having a special mommy’s day right at home.
- If your house is overrun with toy cars, soccer gear and sticky-smelly boy things, feel free to banish them to the closet and lay out a pretty pink table just for yourself.
- Add pretty flowers and light a sweet candle.
- Buy your favorite box of desserts or chocolates. If you forgot to grab something on your last grocery run, just whip up a batch of one-bowl strawberry cupcakes with pink whipped frosting and sprinkles.
- Play some music and gather your favorite reads.
- Pour yourself a glass of smooth Butter, sit back and enjoy.
Here’s the quick and easy recipe for One-Bowl Strawberry Cupcakes.
- Sugar - ½ cup
- Eggs - 2, large
- Oil (vegetable or canola) - ⅓ cup
- Milk - ¼ cup
- Strawberry puree - ¼ cup
- Vanilla extract - ½ tsp
- Red gel food color - 2 drops
- All-purpose flour - 1½ cups, sifted
- Baking powder - 1 tsp
- Salt - ¼ tsp
- Whipped cream - 1 cup
- Sprinkles - as needed
- Pre-heat the oven to 350 deg.F. Line a muffin pan with paper liners and set aside. (This recipe makes 12 small or 6 large cupcakes depending on your pan size.)
- Beat together the sugar, eggs and oil in a large mixing bowl until smooth.
- Add milk, strawberry puree, vanilla extract and food color and beat well to combine.
- With a large sifter placed over the bowl, add the flour, baking powder and salt into the wet ingredients. Mix until just combined.
- Divide batter among liners. Bake for 20 minutes or until the cupcakes pass the toothpick test.
- Remove the pan from oven and cool the cupcakes completely on a wire rack.
- Frost the cooled cupcakes liberally with whipped cream. You can tint the frosting pink or any other color that you like. Add sprinkles and enjoy. Store leftovers in the refrigerator.
