These fluffy savory muffins made in cute shapes and filled with the goodness of vegetables, herbs and cheese is the perfect healthy breakfast or snack.
I call these my ‘Good Morning Muffins’. Don’t they look simply adorable, like a burst of golden sunshine? Muffins are one of the easiest recipes to bake because they are so forgiving. You do not need to break out your electric hand mixer or stand mixer, a simple whisk or ladle will do. There’s also no unwritten rule that muffins have to be sweet; in fact, savory muffins are a great healthy option.
These savory vegetable muffins are filled with the goodness of eggs, vegetables and cheese, making it the perfect quick breakfast or snack. I have used grated zucchini and carrots, a finely chopped tomato, fresh rosemary, and a generous helping of shredded cheese in these muffins. A pinch of spice like black pepper will help to round out the flavors; the muffins are not necessarily spicy, but deliciously savory.
I like to serve these savory muffins warm with a pat of butter or a tangy dipping sauce like ketchup or marinara sauce. You will need to refrigerate the leftovers, and they can be reheated gently in the microwave or a warm oven before serving.
