These mini tarts have a crunchy cereal crust and are topped with fruit yogurt, fresh berries and a homemade caramel sauce. A great snack or light dessert made in under half an hour!

Usually, I make a list of snacks that we want for the week and shop during the weekend when I can be more relaxed and spend time making our selections. (I must also admit that I am one of those people who actually enjoys grocery shopping!)

I also like to use these snacks in unexpected ways and create a fun treat for the family. Recently, I made cute little Cheerios, Yogurt & Caramel Tartlets. I made Honey Nut Cheerios™ cereal crust for the tarts and filled them with Yoplait® fruit yogurt. I topped them with fresh berries and a generous drizzle of homemade caramel sauce before serving. Yum!
And by the way, the caramel sauce is a cheat’s version made by cooking brown sugar, butter and cream together. This way, you do not have to worry about caramelizing (or burning) the sugar or hot caramel drops flying everywhere. I use this brown sugar caramel sauce on cakes, cupcakes, pancakes, milkshakes, and more. You should make it too.
Here’s the super simple recipe for delicious Cheerios Yogurt Caramel Tartlets.
- Honey Nut Cheerios - 1 cup
- Brown sugar - 1 tbsp
- Butter - 2 tbsp, melted
- Yoplait fruit yogurt - 2, 6-oz cups
- Fresh strawberries - 4, sliced
- Brown sugar - ¼ cup
- Heavy cream - 2 tbsp
- Butter - 1 tbsp
- Vanilla extract - ¼ tsp
- Salt - a pinch
- Pre-heat oven to 350 deg.F. Lightly grease four mini tart tins. Set aside
- Crust: Pulse the cereal in a food processor to crumble it. Tip into a bowl. Add melted butter and sugar and mix well to form a crumbly, slightly wet mixture.
- Add 2-3 tbsp of the cereal mixture into each tart pan and using a spoon, press it down firmly in the bottom and up the sids of the pan.
- Bake tart pans for 7-8 minutes. Remove from the oven and cool them before filling. I pop them into the fridge for 5-10 minutes.
- Caramel sauce: Make the caramel sauce when the tart crusts are baking. Take all ingredients in a small saucepan and start heating on medium-low heat till everything is well combined.
- Continue heating, whisking constantly, for 4-5 minutes or until slightly thick.
- Stir in vanilla extract and salt and remove from heat. Cool slightly and pour into a jar.
- Tart filling: Fill tart crusts with a few spoons of either strawberry or peach flavored yogurt. Garnish with a few slices of fresh strawberries and drizzle some caramel sauce on top before serving.
These caramel yogurt tarts make an excellent snack or treat or even a light dessert. They are also so easy to make, and even kids can get in on the fun!
