Fruity, creamy and delicious, these colorful layered lassi popsicles are made by layering mango lassi and berry lassi. With a hint of cardamom and mint, these yogurt pops are the best summer treats!
My favorite summer activity is coming up different kinds of popsicles. No kidding. And fruity ones are my absolute favorite. Remember I introduced you guys to lassi in my previous post? You must remember that I mentioned how Boy loves mango lassi. So I literally popped them into molds and froze them to make lassi popsicles. And what more, I went ahead and made berry popsicles and layered them to make these literally “cool” treats!
Almost anything can be frozen in popsicle molds or in little glasses (like I do sometimes). Fruit juice, fruit purees, iced coffee (yum!), smoothies, milkshakes and much more.
I laid my greedy hands on some plump, juicy mangoes last week. The ones which we did not devour as such were made into smoothies and milkshakes and also, lassi. Lassi is simply an Indian flavored yogurt smoothie made with sweet spices like cardamom, saffron or fruits. I used mangoes to make mango lassi, and strawberries and blackberries to make berry lassi.
I made the lassi slightly thicker, poured them into molds and just when they begin to set, you need to pour the second layer on top. Freeze till solid and enjoy as you please. Anytime. Seriously, I mean it. These are so healthy and such a great treat for kids. That’s what I love about summer. I can simply make popsicles in all flavors, colors and shapes and the little guy will lap them up all. No more whining for candy when he is in an after-school slump. And you know exactly what goes into these pops. No more Kool-Aid popsicles that stain your mouth faster than ink… eww!
You can see that some of the pink layer are light in color and some are more purplish. I had to make them in two batches, one had more strawberries and the other batch was mostly blackberries. You can use your favorite berries or any other fruit for that matter. If using blackberries or raspberries, I would strain the pulp first if your kid is too picky about those seeds in his popsicle.
- Mango - 2 cups, chopped (1 large mango or 2 small ones)
- Yogurt - 1 cup
- Milk - ½ cup
- Sugar - 3-4 tbsp (depending on the sweetness of mangoes)
- Cardamom powder - ½ tsp
- Mint leaves - 3-4, optional
- Berries - 2 cups, chopped (I used strawberries and blackberries)
- Yogurt - 1 cup

- Make the mango lassi layer first. Blend all the ingredients together till smooth and creamy. Taste and adjust sweetness. Remove to a bowl and set aside.
- Rinse out the blender and blend the berries to make a smooth puree. Strain this to remove seeds. Return to blender along with the other ingredients and blend till smooth and creamy. Taste and adjust sweetness. Remove to a bowl and set aside.
- Fill popsicle molds (or small glasses) halfway with either the mango or berry lassi.
- Cover and freeze for 20-30 minutes.
- Remove from freezer and top up with the next lassi layer. Stick in popsicle sticks, cover and freeze 4-6 hours or overnight.
- To remove lassi popsicles easily from molds, lightly run water on the outside of the molds.

Easy-to-make layered fruit smoothie popsicles are a real treat in these warm months. And you can eat as many as you want with absolutely no guilt. They are good for you!
