I am back with another frozen treat. This time it’s the super easy, light and refreshing strawberry popsicles (or ice pops, ice lollies, stick ice or whatever it is called in your neck of the woods). Done right, popsicles are the perfect summer dessert. Cold, refreshing, fruity and what’s more, it comes on a stick! Some brands have a lot of added sugar, some are more fruit. When you make them at home, you can easily control the ingredients.
I had some strawberries that I had to use up immediately. I wanted to try either popsicles or sorbet. Popsicles won purely because of the fun quotient. I had popsicle molds, but the tops were missing. I remember Boy having a fascination for them when he was a toddler. I wonder where they are now. Maybe they went out in the trash. He had a habit of putting stuff in the trash can too. Now he is “grown up” (in his words) and I no longer need to hide the trash can, but I kinda miss those days!
Anyway, back to the pops. Kids love them. In any color and flavor. It’s good for them if they’re mostly just fruit. To make fresh strawberry popsicles, you need strawberries, just a touch of sugar to macerate them and the molds. In the absence of said popsicle molds, use drinking glasses. Ka-pow! Take that, another unwanted kitchen utensil/accessory. We don’t need you anymore!
You will need:
- Strawberries – 1 lb, very ripe
- Sugar – 1 tbsp
- Ice cubes – 2-3, if needed
How to:
- Wash, hull and chop the berries. Add sugar and toss. Allow the juices to release, maybe in 15-20 minutes. Blend well in a blender, adding a couple of ice cubes to make it smooth. Taste and add more sugar if you want. I didn’t.
- Pour into the molds, cover and freeze. In about an hour, when they begin to turn slushy, stick in the popsicle sticks (chopsticks or firm straws work too).
- Freeze till firm, remove from the molds and enjoy! (Stand the molds in a bowl of warm water for a few minutes and the popsicles will be easier to slide out.)
Needless to say, I will be trying this with all the summer fruits – blueberries, peaches, mangoes, you name it. This is the simplest ice pop recipe, you can make creamy popsicles by adding milk or yogurt. Add some fruit juice for sweeter pops. Add chopped fruit bits into the molds for texture. Just have fun and see what you end up with!
