It’s time for a little celebration. Guess what? This is my 100th post, folks! I started this blog on 31st January this year. When I wrote my first post, I never thought I would have a 100 topics to blog about. But here I am, 7 months later. A big shout out to all my readers! Couldn’t have done it without you guys, especially my family, who were the only readers the first couple of weeks!
Now, back to the post. I have been meaning to try this awesome-looking layered jello pudding for quite some time and what better occasion than my 100th post? This jello dessert (it is so easy, I am not sure I can even call it a proper dessert) is everything I hope my blog is – colorful, easy and fun! The thing about a Jello pudding is that it is so easy to customize, both in terms of color and serving size. It can be made in one large container or in small individual cups. Just remember to alternate transparent and opaque jelly layers for a pretty-looking pudding. I’ve seen recipes that use either sweet condensed milk or evaporated milk for the opaque layers. I decided to use the latter. Sweet condensed milk in jelly just sounds weird to me, that’s all. Use it by all means, if that’s what rocks your boat.
You will need: (To fill a 6-cup flat Pyrex bowl)
- Flavored gelatin powder – 3 flavors, 3-oz each
- Evaporated milk – 1/2 cup
- Water – hot and cold
How to:
- Empty the contents of the packets in 3 bowls. I used orange, grape and lime flavors. I decided orange and lime would be the clear layers, and grape would be the opaque layer.
- For the clear layers, dissolve the gelatin in 3/4 cup boiling water. Mix 3/4 cup very cold water in to it. I’ve used less water than what calls for on the box so that the Jello sets quickly.
- For the opaque layer, dissolve the gelatin in 3/4 cup boiling water. Mix 1/2 cup evaporated milk and 1/2 cup cold water.
- Pour the first layer in to the greased pan/bowl or in individual cups. Place it in the fridge till it is just set, maybe 35-40 minutes.
- Now slowly pour the opaque Jello over the first layer and refrigerate till it just sets. Repeat with the last clear Jello layer.
- Cut, serve and enjoy as such, or with a little ice cream or whipped cream on the side. Go on, indulge!
When it was done and served, I realized I’d used the Indian flag colors here. How little ones would love this as a sweet Independence or Republic Day treat!
And oh, you may want to grease that pan well. Do like I say, not like I do, okay?!!
