It’s been a while since I baked a cake. So I think a cake recipe is overdue.
I love a simple vanilla cake. I have tried many recipes, and think I may have found the perfect one. It is simple enough to make any time you are craving for a cake. No need for boxed mixes anymore.
The photos may look familiar to my regular readers. I made this cake to style some photos for the Photography Styling Challenge. Read about it here.
Simple Vanilla Cake
You will need:
- All purpose flour – 1 1/2 cups
- Baking powder – 1 tsp
- Eggs – 2 large, preferably at room temperature
- Sugar – 1 cup
- Vegetable oil – 6 tbsp
- Vanilla extract – 1/2 tsp
- Milk – 1/2 cup
How to:
- Pre-heat oven to 350 deg.F. Grease an 8 or 9 inch cake pan.
- Sift the flour and baking powder together, and keep aside.
- In a mixing bowl, cream the sugar and eggs together for about a minute.
- Add the oil and vanilla extract and mix well.
- Mix in the dry ingredients and milk alternately, starting and ending with the dry ingredients. Mix till just combined. Do not over mix.
- Bake for 30 minutes or till it passes the toothpick test.
- Cool in pan for 5 minutes. Remove and cool completely on a wire rack.
- Serve as is or frosted with a simple vanilla buttercream frosting.
Making a cake from scratch is so much fun. Better still if the recipe is as simple as this. The above recipe can easily be doubled for a 13×9 sheet cake.
This is a sweet, simple cake with a delicious vanilla flavor. The light golden crust that forms on the top is to die for!
I rather prefer this cake plain. Perfect for a lazy evening spent browsing magazines, along with a cup of coffee or tea.

Hi, I have a question. I don’t have a balloon whisk or an electric egg beater but I desperately want to try this cake and other ones too. So can I beat eggs in a mixer grinder? The one that has a blade and which we Indians commonly call a mixie?

I guess you can cream the eggs and sugar together in a mixie. After combining all the wet ingredients, pour it into a mixing bowl and gently fold in the dry ingredients by hand. You can use a wide wooden spoon or ladle for this. It should come out fine. Do try it and let me know how it goes!

The cake looks delicious. I make a similar one and instead of frosting I put a little powdered sugar on the top. Adds a sweetness without being overpowering like icing.
