A friend gave us some home-grown juicy tomatoes. I used a couple of them in curries, when suddenly my mom reminded me that I could juice them for little Boy. Tomatoes are full of essential nutrients, you know. So I made this super summer cooler with the rest of the tomatoes. They were quite sour and even though I added sugar, it needed a little something more. Hence the watermelon. I would have never paired them otherwise, but surprisingly they work together quite well.
You will need: ( For 2 servings)
- Ripe red tomatoes – 2, large (not the bland Roma tomatoes, try to use the juicy organic ones)
- Watermelon – roughly cubed, maybe half a cup
- Sugar – as per taste (my tomatoes were quite sour and I needed about 6 teaspoons)
- Ice cubes
How to:
- Blanch the tomatoes for a minute in boiling water. Remove and place them in cold water. This should make the skins easy to remove.
- Cool the tomatoes and blend with ice cubes, sugar and watermelon cubes.
- Taste and see if it needs more sugar or watermelon. Don’t overdo the watermelon though, you just need a hint of their sweetness.
- Strain and serve cold.
The perfect summer cooler that is so good for you too!
Meanwhile, I found an informative article on why supermarket tomatoes taste so bland. It seems that the taste has been sacrificed, through genetic mutation, for better yield, uniform fruit color and texture.
