I love the potato salad from Bill Miller BBQ. I do not have it that often, but I wanted it so bad the other day, I decided to make my own potato salad.
I did not want to use mayonnaise or sour cream, but I found many recipes that used plain yogurt as the base for the dressing. Here is my modified recipe made using ingredients I had on hand.
You will need:
- Potatoes – 6-8, medium-sized
- Red onions – 1/4 cup
- Apple cider vinegar – 1-2 tbsp
- Dressing – 3 cups*
- Bacon – 2 strips
- Eggs – 2
*For the Dressing:
- Plain yogurt – 3 cups
- Olive or vegetable oil – 1 tbsp
- Remoulade dressing or mustard – 1 tbsp
- Salt and Pepper – to taste
How to:
- Boil whole potatoes in salted water, till they can be easily pierced with a fork.
- While the potatoes are being boiled, lightly pickle the onions. Add the vinegar to the thinly sliced or chopped onions, cover and let stand for at least half an hour.
- To make the dressing, mix all the dressing ingredients together. I did not have mustard on hand, but I did have a bottle of Louisiana-style Remoulade dressing and added about a tablespoon of it. You can add mustard or horseradish or even ketchup, anything that adds a little kick to the yogurt will do.
- Once the potatoes are cool, peel them and cut them up into small cubes.
- Mix the potatoes, the red onion and vinegar mixture, and the yogurt dressing. The dressing might seem like a lot now, but the potatoes will absorb most of it.
- Chill for an hour or two before serving.
- And oh, don’t forget the pièce de résistance – garnish with chopped up bits of crispy bacon and hard-boiled eggs. (I wonder if a bacon garnish negates the healthiness of the dressing?! Whatever!!)
It turned out so yummy, I forgot to photograph the finished product! I just remembered in time, but by then, most of the salad was gone. I only got this measly serving to photograph! Well, that should tell you how good it was!!
The yogurt dressing is deliciously creamy and definitely healthier than the traditional mayonnaise. You can get all fancy and add other ingredients like chopped up dill or red peppers too. But don’t overdo it, and let the yogurt dressing shine!
