Easy Wineglass Trifle

I decided to construct a simple trifle for dessert today. I don’t have a trifle bowl, but any deep glass bowl would probably work. Then I thought, why not serve up individual portions in a wineglass? So, this is how I constructed my trifle. Yup, I used the word ‘construction’, because a good trifle is nothing short of smart construction of layers.

A trifle is all about choices. Cake or trifle sponge fingers? Pudding or custard? Jelly or cream? Mangoes, bananas or berries? Chocolate or nuts? Here is how I made mine.

  • I had some leftover cake strips (from my bunny cake adventure) in the freezer. I crumbled up the cake chunks and spread them at the bottom of each glass.
  • Then I added a scant layer of crushed salty crackers, for a salty surprise amid all the sugary goodness!

  • Mind you, I am a great proponent of easy desserts, so I decided to go the simplified way. I made vanilla custard from custard powder, and let it cool slightly. I had fresh, ripe mangoes on hand. I chopped up a mango and added to the cooled custard. This was the next layer in my trifle.
  • I macerated some fresh strawberries and added them as the next layer. To macerate the berries, chop them up, add sugar as needed and a dash of lemon juice. Refrigerate the berries, so that the juices are released.

  • Finally, I topped it off with fresh whipped cream and garnished with a few pomegranate seeds (Did you know that the correct term is ‘arils‘? I never knew!). I chilled the prepared trifle glasses for an hour or so before serving.

Needless to say, it turned out colorful and sooo yum!!!

The trifle layers are cake chunks, crushed salty crackers, vanilla custard with mango, macerated strawberries, fresh whipped cream and pomegranate!
